Terveelliset suklaa-tofu-jäätelöpuikot
Don’t let the tofu in the title put you off, these chocolatey popsicles are delicious. The recipe uses silken tofu to add a rich creamy addition to the frozen treat, that is sometimes difficult to find without adding vegan cream. I have sweetened the popsicles with banana to limit any added sugar and by adding raw cacao or carob, you get all the chocolate flavour with the added nutritional boost
Chocolate tofu popsicles – makes around 6 popsicles depending on the size of your moulds
100 g silken tofu (I used Clearspring)
1 large ripe banana
2 tbsp raw cacao or carob powder
250 ml plant based milk
chopped nuts and flaked coconut for decoration
Simply add all the ingredients to a blend and whizz up until smooth.
Pour into your moulds and freeze. I left the popsicles for a couple of hours before adding the lollipop sticks so the mixture was frozen enough to support the sticks.
When ready to serve, run the moulds under hot water to make them easy to remove. Leave the popsicles for a couple of minutes, before dipping in your chosen topping.
