
Raa’at avokadotryffelit
I always seem to over indulge during the summer holidays, so decided to try to satiate my love of all things sugary and chocolate with these raw avocado truffles. They are incredibly easy to make, containing only two ingredients. Try and find the best quality chocolate you can, it will really make a difference to the flavour. Also feel free to experiment with flavoured chocolates, for example mint or orange. I added a little sea salt to my truffles, as I am obsessed with all salted sweet things.
Raw avocado truffles – makes around 12 truffles
1 avocado (not overly ripe), de-stoned, skin removed and roughly chopped
100 g good quality vegan friendly dark chocolate
a good pinch of sea salt (optional)
raw cacao, chopped nuts, coconut flakes, matcha etc for rolling
Melt the chocolate in a small heatproof bowl suspended over a pan of simmering water.
Add along with the chopped avocado and sea salt (if using) to a blender/ food processor and whizz up until thick and creamy. Refrigerate for at least half an hour to make the rolling process easier.
Once chilled take heaped teaspoons of the mixture and roll into truffle side balls, before rolling in your chosen coating.
Return to the fridge until you are ready to serve.
Great timing. I’m having trouble getting through the avocados the possums are knocking off my tree. A great addition to my chocolate and avocado repertoire 🤩
