
Avokado-tahini-hernehummus
Just a quick post today as I am busy preparing to move into my new apartment. This is a quick and easy spread that is delicious, fresh and healthy. It is also good for any of you who have problems digesting chickpeas, but still want to enjoy a hummus like spread. It works great on bread, or served with these rye nacho chips!
Avocado, Tahini and Hummus
150 g frozen peas, defrosted
1 large ripe avocado
2 tbsp tahini
1 garlic clove, peeled and crushed
juice of a lime
a good handful of coriander roughly chopped
salt and freshly ground black pepper
olive oil to serve
Add the peas, avocado flesh, tahini, garlic, lime and coriander to a food processor and season well with salt and pepper.
Pulse until smooth, taste and add a little more seasoning or lime juice if necessary.
Top with a drizzle of extra virgin olive oil and a few extra grinds of black pepper
