Anyone would think I love a good burger! This just happens to be my fourth burger related recipe and there will probably be more to come. This time I have prepared a tasty chickpea and nut burger for you. The walnuts add extra protein and an earthy ‘meatiness’ which can be lacking in some veggie burgers. I chose walnuts, but you could just as easily use Brazil nuts, hazelnuts, almonds or pecans.

Chickpea nut burgers – serves 4
a small red onion, roughly chopped
a garlic clove, roughly chopped
40g walnuts
1 tsp ground cumin
1 tsp ground coriander
a good pinch of cayenne pepper, more if you like it hot
1/2 tsp smoked paprika
400g can chickpeas, drained and rinsed
25g rice flour
a good handful of fresh coriander
1 lime
salt and pepper
oil for frying
vegan mayo, salad and buns to serve
Add the onion, garlic, nuts, ground cumin, ground coriander, paprika and cayenne into a food processor and blend until smooth as possible. Season well before adding the chickpeas, flour and fresh coriander. Add a really good squeeze of lime, before pulsing the mixture until it begins to come together. Don’t over blend, you want to retain some texture.
Use your hands to form the mix into 4 burger patties. Heat a little oil in a frying pan and fry the burgers on each side, until crisp and golden.
Serve in buns with a little mayo and lots of crisp salad.
