
Vanilijalla maustetut paahdetut aprikoosit
Apologies for the lack of posts recently, not only have I been away on holiday, but I have started a new job and spent 3 days at Helsinki’s Flow festival. I am not quite caught up with everything yet, so I only have a quick breakfast idea for you. The summer months are full of fresh fruits and berries and one of my favourites, apricots, are in the shops right now. The best thing about these roasted apricots is how versatile they can be. Serve them simply with yoghurt or fresh berries, top them whilst warm with granola to make a quick crumble, or use them as a fruity addition to a cake or dessert. If you are not a fan of vanilla, try a little cinnamon, ginger or anise, all work well with apricots.
Vanilla Spiced Roast Apricots
400 g apricots, rinsed and patted dry
around 4 tbsp coconut sugar
1 – 2 tsp vanilla powder
Simply half the apricots and remove their stones. Arrange them on a large baking tray, skin side down and sprinkle each half with a little coconut sugar and vanilla powder.
Roast in the oven at 180 degrees c. for around 20 minutes, until tender, but not so soft they fall apart. You may need to extend the cooking time if your apricots are under ripe.
