Watermelon, Cucumber and Mint Salad

Watermelon, cucumber and mint salad

Is it wrong that I am already wishing for the summer weather to be over?  I am not good with heat.  I love coats, scarves, hats and winter boots!  I know many Finns will think I am crazy, but I actually love the dark nights, inches of snow and minus twenty degree temperatures.  In my campaign to survive summer, I am having to come up with as many light refreshing ideas as I can (you may have already seen my Smoothie Ice Pops, which are a life saver in these overly temperate times),  so this post is a simple, light refreshing salad that works well as a starter, or as a BBQ side.  If you have never tried watermelon with sumac and black pepper I would highly recommend it.  I have to thank Mr D. Krulla and his cheffing ways for this revelation, the sumac’s fruity notes bring out the watermelon’s flavour and the black pepper adds a little heat.   If you make this in advance I would recommend adding the cucumber at the last minute, as the salt tends to draw out the water and make it very wet.

For some other light summer ideas, check out my Beetroot and Blood Orange Salad , Beetroot Carpaccio with a Pistachio, Dill and Lemon Dressing , Black Rice Superfood Salad with Soy Cashew Dressing and my Summer Salad with Roasted Butter Beans and a Sultana Dressing.
