Super Berry Muesli using Luonnon Magiaa freeze dried berries


I was lucky enough to be contacted by Luonnon Magiaa (Magic of Nature) a Finnish  wild food and super food company based in Ikaalinen, a small town North-west of Tampere.  They are small family run business who produce natural, pure herbs, berry powders and freeze dried whole berries.  Nina, one of the owners explained to me, she had been living and working around the world, but missed all the berries and herbs one can forage from the Finnish countryside.   So on moving back to Finland set up their Luonnon Magiaa company.  All their products are 100% natural and only have little to no added ingredients.   I am a big believer in helping support local businesses and so jumped at the chance to test some of their range.

Here is my first recipe using their ingredients, my super berry muesli.  It is packed full of nuts, seeds, and Finnish oats, but what really lifts it above regular muesli are the inclusion of Luonnon magiaa freeze dried berries.  I used their Finnish lingonberries, bilberries and aronia or choke berry.  They add a fantastic tang to the muesli and make a perfect light breakfast dish.

Super Berry Muesli

6 dl/ 600 ml organic gluten free oats

1 dl/ 100 ml whole almonds

1 dl/ 100 ml walnuts, chopped

1 dl/ 100 ml raw cashews

1 dl/ 100 ml sunflower seeds

1 dl/ 100 ml pumpkin seeds

2 dl/ 200 ml flaked coconut

1 dl/ 100 ml shelled pistachios, chopped

1 dl/ 100 ml linseeds

1/2 dl/ 50 ml poppy seeds

1/2 dl/ 50 ml chia seeds

1/2 dl/ 50 ml sesame seeds

1 tsp ground organic ginger

1 dl/ 100 dl Luonnon Magiaa freeze dried lingonberries

1 dl/ 100ml Luonnon Magiaa freeze dried bilberries

1 dl/ 100 ml Luonnon Magiaa freeze dried choke berries

Super berry muesli

Preheat the oven to 175 degrees c.

Spread the oats, almonds, walnuts and cashews on to a lined baking tray and toast in the oven for 10 – 15 minutes until lightly toasted.

Allow to cool and tip into a large bowl with all the other ingredients except the freeze dried berries.  Mix well and finally carefully fold in the berries so as not to crush them too much.

Store in an airtight container.
