
Uunipuuro – kahdella tapaa
This was on of my first blogs posts, just over a year ago. I decided to rework the recipe slightly and reshoot the pictures (the original was taken on my iPhone 6!). While this takes a bit longer than than normal porridge, it was definitely worth the wait. The porridge turns out super rich and creamy, almost dessert like. This is definitely not an everyday porridge, more of a weekend treat. I usually have Oatly I Kaffe in my fridge. Anyone who uses it will know it is super creamy and a little higher in fat than regular plant milks. If you use Oatly I Kaffe I would recommend you replace some of the milk with water to lighten the dish.
Apple and Almond Baked Porridge (serves 2)
150g oats
500 ml of plant based milk
1 apple, peeled and grated coarsely (I used royal gala)
6 dates, roughly chopped
1 tablespoon homemade almond butter
a good pinch of salt
1 teaspoon cinnamon
Simply cover the oats with the milk and leave to soak for 10 mins. Add the remaining ingredients, mix lightly and pour into an oven proof bowl. Bake for 15 – 20 mins at 190 degrees.
For the banana berry porridge I used a similar method. I just replaced the apple and dates with a chopped banana and a generous handful of frozen berries.
