Today is Shrove Tuesday! (In Finnish ‘laskiaistiistai’). While the Finns celebrate the beginning of Lent with soft pastries filled with cream and an almond/ jam filling, us Brits gorge ourselves on pancakes. Usually they are more like a French crépe, but here I have made a healthier gluten free version with only 3 ingredients. The fact that they are a little healthier means you don’t need to skimp on the toppings! I opted for plant based yoghurt, blood orange, berries, toasted almonds and a little maple syrup. Try to get the ripest banana you can and your pancakes will be nice and sweet.
3 ingredient banana pancakes – makes 4 – 6 small pancakes
1 super ripe banana
50 g gluten free porridge oats (I used provena)
1 dl of plant based milk
Simply add all the ingredients to a blender and whizz up to a thick batter. Heat a little oil in a pan and cook spoonfuls of the mixture until golden brown, flipping as you go.
Serve immediately with any toppings you so desire.
