Even though I am attempting a cleaner January, I still crave a burger. This has to be one of my favourite veggie burgers. The addition of mushrooms and brown rice miso give the burgers a really ‘meaty’ taste. I am slightly obsessed with miso at the moment. I really like Clearspring’s range, they have a good variety from sweet white miso, which works well when roasting vegetables (see my Mixed grain bowl with white miso roasted broccoli and tahini dressing) or in even cakes (try my Chocolate Miso Cake) to more umami packed Hatcho and brown rice miso. Try to get the patties relatively thin as then they will crisp up nicely. To keep the dish fairly healthy I served the burgers with a simple guacamole, salad and a rye bread bun.
Farro, Mushroom and Black Bean Burgers – serves 4 – 6
2 tbsp chia seeds
5 tbsp water
150 g mushrooms, finely chopped
2 cloves of garlic, crushed
100 g cooked farro
285 g carton of black beans, drained
bunch of fresh coriander, chopped
1 heaped tsp Clearspring Brown Rice Miso
1/2 tsp ClearSpring Soy Sauce
a few good pinches of cayenne pepper
1 tsp ground cumin
1 tsp smoked paprika
ground black pepper
1/2 tsp dried oregano
4 tbsp gluten free oat flour (I used Myllärin)
oil for frying
Burger buns, salad, sliced tomato, sliced pepper and guacamole to serve
Start by mixing the chia and water to form a chia ‘egg’, set to one side.
Fry the chopped mushrooms in a little oil, until most of their moisture has evaporated and they are beginning to brown. Throw in the garlic and and fry for another minute before tipping into a large bowl.
Add the farro to a blender and pulse until it has a more finer, couscous like texture. Add to the mushrooms.
Next add the black beans to the blender and blend to a thick paste, before adding to the bowl.
Add all the remaining ingredients, including the chia egg, and mix thoroughly to form your burger mix.
Shape into thin round patties and refrigerate for at least 30 minutes.
Pan fry the burgers in a little oil, until golden and crispy on each side.
Build up your burgers, serve an enjoy!

Hi and thanks! Farro is a type of wheat that is sold dried and you then boil. It is great in salads and soups.
