After seeing apple nachos around social media, I had to give them a try. I decided to add pears as I am a huge fan, plus they are beginning to come into season here. I can happily report that it was success. Crunchy sharp apple and pear, topped with salted caramel sauce, almond butter drizzle, toasted pecans, fresh fragrant mint and dried sweet cranberries. This would make a great ‘healthier’ snack for kids or a simple dessert at a relaxed summer dinner. Feel free to mix up the toppings, the main thing is to have something sweet and something crunchy on top as a contrast to the sliced fruit. If you want to make this ready further in advance, toss the sliced fruit in a little lemon juice to stop it from turning brown.

Apple and Pear Nachos – serves 3 – 4
2 – 3 mixed apples, I prefer crunchy, crisp, slightly tart apples as I think they work better with the sweet sauces
1 ripe pear
a couple of handfuls of toasted pecans, roughly chopped
a handful of dried cranberries
a handful of fresh mint, finely chopped
a serving of my salted caramel sauce – recipe here
4 tbsp almond butter, see my recipe here
coconut milk
Firstly prepare the almond butter drizzle. Simple thin down your almond butter with coconut milk, or other plant based milk, until you have a sauce like consistency. You may need to give it a bit of a whisk to remove any lumps.
De-core the apples and slice them into quarters, then cut them into thin half moon shaped ‘nachos’. For the pear, remove the stalk, slice it in half and use a spoon or a melon baller to remove the core. Slice the pear, thinly into nachos
Layer your ‘nachos’ on a big plate, if you want to share, or separate onto smaller dishes. Drizzle with the two sauces, sprinkle with the nuts and cranberries and finish with a little chopped mint.
