Pear, Apple and Vanilla Bircher Muesli

Unfortunately I have to work today, but that doesn’t mean I am going to skip my weekend breakfast.  Breakfast is my favourite meal of the day, closely followed by lunch, dinner, snack time, mid morning treats and elevenses!  Simply put it, I love to eat.  As I knew I had an early start last night I prepared the base of this super tasty bircher muesli and then I just decorated it this morning with some cacao nibs, hazelnuts, toasted almond, vegan chocolate flakes and some dried mulberries.  I love the edition of pear and vanilla to a traditional bircher.  It really adds a different, lighter flavour.  Feel free to mix up the flavourings, ginger also works well.  Or if you want a truly indulgent start to the day, add a spoonful of vegan nutella (see my Vegan Nutella recipe), or stir in some raw cacao powder.

Vegan Pear, Apple and Vanilla Bircher Muesli – serves 2

80 g Oats (I used Myllärin Gluten Free Oats)

1 ripe pear, grated

1/2 green apple, grated

1 ripe banana

almond milk

1/2 a vanilla pod, vanilla extract or vanilla powder

pinch of salt

2 tbsp plant based yoghurt

The night before place the oats in a bowl and cover with almond milk.  Stir and allow the oats to begin to absorb the milk.  Add a little more so you have a runny porridge like consistency.  Add the grated apple and pear and then grate in the banana.  Finally scrape out the vanilla seeds from the vanilla pod, add the salt and give the mix a good stir.  I prefer fresh vanilla, but you can substitute it for vanilla extract or vanilla powder.  Cover the bircher and leave in the fridge overnight.

The following day stir in the yoghurt and if your bircher is a little too thick, add a little more almond milk.  Decorate as you wish and the bircher should last 3-4 days in the fridge.  In fact the bircher seems to get better after a couple of days!
