
I cannot get enough of overnight soaked oats. I have been trying out a few new flavours and these are two of my favourite. They are so simple and quick and you can easily make up a big batch of oats at the start of the week and mix up a different portion each day. As a base I use 30g of oats and 75ml of almond milk and a pinch of salt per person per portion. Simply cover the oats with the milk, add the salt, give it a stir and leave to soak overnight until they are super soft and creamy.
For the bircher muesli I added half a grated apple, half a grated banana, a pinch of cinnamon and 3 chopped dried apricots per portion.
For the chai spiced oats I added a teaspoon of maple syrup and a good pinch each of cinnamon, allspice, nutmeg, cloves and ginger per portion.
If you find the oats a little thick add a little extra milk before serving. Feel free to top the oats with anything you fancy, almond butter, berries, seeds, nuts, cacao nibs, coconut, poppyseed, flax seed, edible flowers to name just a few! The chai spiced oats worked really well with some crushed blueberries and I love to top the bircher with extra fresh grated apple and dried cranberries.
