
After my trip to by CHLOE in New York I was inspired to recreate the amazing burgers we had there. Luckily the by Chloe website has published a recipe for a lentil and rice burger, so I thought I would give it a try. I added some harissa paste to the recipe to bring a little smokey spice to the table. I have to say it worked really well, super tasty, filling and meaty. I made my own burger buns and accompanied it with some homemade sweet potato fries.
Vegan Burger – makes 8 burgers
1 onion finely chopped
1 clove of garlic
170 g cooked brown rice
290g carton of cooked lentils, drained
140g walnuts, toasted
3 tsp harissa paste (or more if you like it really spicy!)
1 tsp dried basil
85 g plain flour
Burger buns, vegan mayonnaise, mustard, gherkins, tomato slices, red onion slices, lettuce and whatever you fancy to build your burger
Fry the onion over a medium heat until it begins to brown, add the garlic and allow it to soften. Add the onion and the other burger ingredients to a blender and pulse until the mixture begins to come together. Season to taste. Try not to pulse the mix too much, you want to leave some texture in the burger. Using oiled hands, form the mix into 8 patties. Fry your burgers in some oil until they are nicely browned on each side and cooked through (roughly 6 mins each side)
Now you can begin to build your burgers. I mixed some vegan mayonnaise with mustard and chopped gherkins to create a sauce, layered lettuce, tomato, red onion, and sliced gherkins on top, but you can use whatever you fancy.
