Vegan and Vegetarian Toasts

As an English man I love a piece of toast!  However I am not talking about the sad pieces of processed white bread topped with margarine and sugary supermarket jam that I used to have as a child (sorry mum).  I am talking about freshly toasted rye bread or spelt and apple loaf topped with avocado, fresh pesto, seeds and rocket.  I remember visiting Europe as a child  (many of us in the UK used to believe once you crossed the channel, you were entering a foreign place called Europe!) and wondering why do these funny europeans eat savoury things for breakfast, why are they choosing fresh cheeses and ham over our lovely sugary sweet english breakfast cereal or soggy toast with butter and marmalade.  However now I am a changed man.  Yes it may have taken moving to Finland and a few years, but now I can’t imagine only having sugary things for breakfast.

I am always looking for new toppings and have decided to share 8 of my current favourites.  I love to mix and match my ingredients to keep it interesting.  So to start with above are two vegan options.  On the left is a beetroot hummus toast with pumpkin and sunflower seeds and a sprinkling of dukkah.  For anyone who doesn’t know dukkah is a Middle Eastern seasoning containing, among other things, roast chickpeas, coriander, fennel seeds and black onion seeds.  On the right is an avocado toast topped with a homemade pesto and a nice handful of fresh rocket.

Next, two more savoury toasts.  On the left a vegan hummus with toasted sunflower seeds and carrot ribbons and on the right tomato, mozzarella, homemade pesto and basil.

Here we have a vegetarian cream cheese, toasted pecans and walnuts and a few sprigs of fresh mint.  On the right a vegan option with homemade almond butter, sliced banana and a sprinkling of cinnamon.  This is one of my personal favourites, especially when the bread is still warm and the almond butter begins to melt.

Finally two more vegan sweeter options.  On the left more homemade almond butter, sliced persimmon and pumpkin seeds.  On the right nut butter, sliced apple and finished off with some tangy cranberry powder.
